Coconut Fish Curry with fresh Roti

This delicious fish curry is creamy, packed with flavour the perfect meal to enjoy on a cold winter’s night. Pair this dish with fresh roti – perfection!

SERVES 4

INGREDIENTS

2 tbsp oil
1 large yellow onion, finely chopped
4 garlic cloves, finely chopped
1 cinnamon stick
2 tsp ground cumin
2 tsp turmeric
2 tsp curry powder
1 tbsp garam masala
400ml can coconut cream
400g can chopped tomatoes in juice
800g Takitimu Hoki or Cod cut into small bite sized cubes
Steamed rice, to serve
Coriander, to serve

Roti

2 cups flour
2 tsp baking powder
2 tsp salt
1 cup boiling water
1 ½ tbsp butter, plus some more for cooking

METHOD

Roti

In a bowl, mix together flour, baking powder and salt.

Add the butter to the boiling water and stir to dissolve. Pour water and butter slowly into the dry ingredients. Mix into a nice doughy texture.

Put some flour on your hands and roll the mixture out into small segments to make rounds.

Melt some butter and rub over sections. Place into a hot pan or skillet, it should start to bubble right away.

In a large bowl, sift in flour and salt. Add melted butter and mix in with a fork until flour is crumbly. Mix in water until the dough pulls together.

Knead dough on a lightly floured surface until smooth. Divide into small balls and start rolling them out.

Heat your frypan to medium-high heat and melt some butter, spreading around the pan. Place in your roti. Once you start to see bubbles appearing, you can flip. Cook fully until small brown spots appear.

Curry

Heat oil in a large frying pan over medium-low heat. Add in the onion and cook for 3-4 minutes, until soft.

Add in the garlic, cinnamon stick, cumin, turmeric, curry powder and garam masala. Season with salt and pepper and cook, stirring consistently until the spices are fragrant.

Stir in the coconut cream and then the tomatoes. Bring to the boil and add the fish.

Cook for 3-4 minutes, stirring gently, until the fish is cooked.

To serve

Serve the curry in bowls with steamed rice and the roti on the side. Garnish with coriander and enjoy!
